Dark cherry wine with buttery notes, lazy citrus acidity finish

This microlot comes from one of the very small farms we visitied - in fact we stumblled upon this farm by chance.

The farm is owned by the 5th generation grower Ronald Monge Valverde and his son. The farm an inheritance from Ronald's Grandfather, Sacarias Valverde.

The geography is well suited to growing coffee having growing slopes at high altitude that face the early morning sun with cloud protecting the coffee trees in the afternoon.  The unique red soil found in the valley is of volcanic origin which is very high in nutrients and the area has an average relative humidity of 84% which is ideal for coffee.

The cherry is delivered from the farm where it is then floated and separated to ensure only ripe cherries are used in producing lots. Once ready the cherry is moved to the patio or rasied beds usually late in the afternoon so they lose the initial moisture without ‘heat shock’ from the strong afternoon sun. They are then left for 48hrs to settle and not raked or turned to prevent the skin of the cherry being damaged whilst soft. The coffee is turned every 45 minutes – 1 hour on the patio until it reaches moisture of 11%.

Usually the drying on the patio will take between 10-14 days at the farm location and is then left to rest in bags in grain pro to settle for 30 days before being hulled ready for shipment.

This is a super nice coffee from a really nice little farm that only produces 50 bags a year.

All our coffee is sold as whole beans, which we recommend for optimum flavour and freshness.
