We visited Jasal Estates (Jan 2016) which is owned by the Salaverria family.

The reason for the inital visit was to further our relationship by meeting and looking for new crops, and new crop processing methods where we can enhance the taste value in the cup by changing the processing and drying methods of the coffee. This can really only be undertaken by working with the farmer at origin.

The Salaverria family are fifth generation coffee farmers and grow coffee across a number of estates that they have either inherited or bought over the last few years. All the coffee is processed at their central mill, Las Cruces, that’s also owned by the family.

The first thing to say is the attention to detail on the farms and at the dry mill is superb. Their selective hand picking on the farms is absolute and so too is sorting prior to processing – with not an under ripe cherry mixed or processed – it really is something to see first-hand.

Most of the pickers come to the farms from the surrounding communities and have direct involvement in quality standard on the farm for which they are rewarded with good rates of pay, an improved quality of life and welfare of the families.

The coffee cherries are then processed at the central mill, Las Cruces with the highest degree of care and attention. Even the clean down after each lot or each farm to avoid cross lot contamination is surgical. We were very impressed.

This family reserve lot is farmed at 1200-1500 masl on the Los Nogales estate situated in the department of Ahuachapán and in the region of Apaneca, Ilamatepec. This area is an ideal for high quality coffee cultivation.

The coffee bushes and the coffee harvest is constantly monitored by a team of agronomists that make sure they are respecting coffee growing standards and the traceability of their coffees. All the estates use and promote sustainable coffee growing practices protecting the environment.

All our coffee is sold as whole beans, which we recommend for optimum flavour and freshness.
