Ethiopia Layo Taraga

Apricot, peach, cranberry, jasmine. Very floral and complex with delicate notes of honey

A stunning coffee from the Layo Taraga Washing Station. Layo Taraga was founded in the year 2000, and serves around 500 smallholder farms, each of whom own about 1/2 hectare of land in the area around Haro Wachu town in the Uraga District. This lot is a selection of Bourbon variety coffees.

Ripe cherries are delivered to the station where they're graded, sorted, de-pulped and then fermented underwater for between 24 - 48 hours, depending on temperature and humidity.  Parchment is hand sorted in washing channels, and then placed onto raised African drying tables. The drying period lasts for around 14 days, until moisture level reaches 11%. The beans are then transported to Addis in parchment, and then milled prior to export.

All our coffee is sold as whole beans, which we recommend for optimum flavour and freshness.
