Guatemala Pasajquim

Sweet complex aroma, balanced caramel and floral flavours with juicy acidity (think bright strawberry), velvety mouthfeel

Pasajquim is a K'iche' Mayan community (which in itself is interesting) of about 1600 people in the western highlands of Guatemala. The village is really in the middle of nowhere – you actually drive down to the village which sits in a valley - one road in and the same road out– it is very remote – even the village municipal offices are over an hour away.

The village is surrounded by coffee which is the main source of income. Each family has their growing areas and their own small processing facilities – the coffee destine for us is selectivity picked, sorted processed in small lots, then laid on patios to dry – at full harvest basically any flat surface to hand is used to dry coffee – even the small school playground was fall.

All our coffee is sold as whole beans, which we recommend for optimum flavour and freshness.
