Domingo Martinez is the owner of 1.5 hectares of coffee near to the town of San Manuel, Lempira. Domingo grows Pacas,Parainema, Lempira and Ihcafe90 with a small area of villa sarchi. Dom has only just recently started planting parainema. He also has bee hives for honey, fruit trees and vegetables for his own consumption.

Due to the altitude and variety that Dom grows, he has been processing all of his coffee as washed lots, since the cup is very complex and usually high quality.

This year the harvest for all producers was extremely difficult with increased rains during the harvest and a lack of pickers meaning a large amount of coffee was lost from either falling to the ground or swelling and splitting on the tree.

The cherry is cleaned and washed and then floated to remove any immatures.The coffee is then taken to the beds where it is dried for between 20 -30 days weather depending where it is turned hourly.

All our coffee is sold as whole beans, which we recommend for optimum flavour and freshness.
